- Summer Hummus Toasties
Grill some sourdough bread, lightly drizzled with olive oil. Spread a layer of hummus and top with some fresh cucumber ribbons. Sprinkle some fresh dill leaves and finish with a garnishing of sumac. These toasties are best served cold.
- Finger Brown Bread Sandwiches
Lightly butter slices of multigrain bread slices and grill in a hot toaster. Add a layer of cucumber tzatziki. For the filling add fresh rocket leaves, halved cherry tomatoes and kalamata olives. Season with salt and pepper and cut it into thin slices with a bread knife.
- Chocolate Energy Bites
For this chocolate bite recipe, blitz some Medjool dates, dried blueberries, raw cacao powder, dark chocolate chips, almond flour, orange zest, pistachios and cranberries in a food processor. Roll the bites into desiccated coconut.
- Mini Pita Pockets
Use whole wheat mini pita bread for this recipe. Lightly grill the pita bread and fill in with some hummus, halved falafels, tomato slice, and lettuce. Season with salt, pepper, sumac and serve cold.
- Almond Butter & Strawberry Rice Cakes
Layer some rice cakes with a generous layer of unsweetened almond butter. Top with some halved fresh strawberries. Finely chop some fresh mint leaves and sprinkle on top. Finish with a sprinkling of hemp seeds.
- Rainbow Rice Paper Rolls
Soften some rice sheets in warm water. Slice bell peppers, red cabbage, lettuce and set aside. Remove the rice sheets and place on a chopping board. Place the veggie slices and finish with some microgreens and sesame seeds. Roll the rice sheets carefully and cut into halves. To make a peanut dip, add some peanut butter, sriracha, soy sauce, grated garlic, ginger, lemon, salt, pepper, and maple syrup. Mix with a fork until smooth. Serve the rice paper rolls with the spicy peanut dip.
Make these healthy summer snacks before indulging into store-bought crackers, nachos, etc. Most of these recipes can be served cold and stored in the refrigerator for later.
